This is my Sunday night supper after a weekend of too much wine and song:
100g basmati rice, cooked
two medium tomatoes, chopped
I spoon olive oil (you decide on the size of the spoon depending on how much oil you like!)
3 inches of cucumber, diced
30g cooked peas or sweetcorn
half an avocado, diced
half a spoonful lemon juice or vinegar
30g pine nuts or seeds
half a red capsicum, diced
two medium mushrooms, raw or cooked
Mix the whole lot together while the rice is still a bit warm, add salt and pepper to taste, and eat while watching TV!.Www@FoodAQ@Com

hmmm!.!. hard to say!. I have a number of favorites!. Salad with romaine lettuce and herb mixes, walnuts, dried cranberries, blue cheese, or sharp cheese, celery, cucumbers, with grilled/broiled salmon or chicken on top, and my home made dressing!.
There's a simple dish I make with salsa, chicken and zucchini:
boneless, skinless chicken breasts
green pepper (cut in strips)
onion (sliced thin)
zucchini (sliced and cut in quarters)
jar of your favorite salsa
Put the chicken in a baking dish, put the peppers, onions and zucchini on top!. Pour salsa over all!.
Bake at 350 deg!. F (175 C) for about an hour!. You can cut into the check to check it!. Spoon juices over during cooking a few times!.
There you have it!. If you like, you can buy the shredded reduced fat Mexican cheese mix to sprinkle over it!. About 5 minutes before chicken is done, sprinkle on the cheese!. Take out when it's melted and starts to brown!.
