Answers:
For most ripening shortcuts you can use a banana added to the brown paper bag,
Most fruit produce ethylene which is the gas "tells" the fruit to ripen!.
In a bag paper bag the reaction between ethylene and the paper accelerates the process slightly!.
To turbo charge the process add a banana to the tomato and the bag, because bananas naturally produce quite a lot of ethylene!.
With just the bag you should see ripe tomatoes in 5-6 days!.
With the banana it should be 3-4 days depending on the green-ness and size of the tomato!.

It may take a while depending on how close to ripe they really are!. But yes, the bag traps ethylene gas which makes fruit ripen!.Www@FoodAQ@Com
