I ama former chef and that was always my treat, I worked with a Polish lady once and she called the core "Polish Apples", I do what I find is to cut it into small slices or cubes, I make a german style sweet and sour red cabbage with cider vinegar, brown sugar, onions, caraway seed, apples and a bit of garlic, all cooked up slow until the liquid is reduced and it starts to scorch and caramelize!. With the length of cooking all cabbage cores will breakdown/soften, I use white and savoy alot and never waste anything but the darker not so edible leaves for stuffing in cabbage rolls,stew/soups or as a base for the dishes and cover them to retain moisture in the oven, there is no reason to throw them away!.Www@FoodAQ@Com

No - you don't eat the core on any cabbage!. If you cut the cabbage in half, you can cut out the core with a triangular cut at the bottom!. It's easier to shred too, when it's cut in halfWww@FoodAQ@Com
