Hey there, try this one, I used to use this one a lot when working in 1 restaurant, gives an amazing tomato flavour, just substitute the roma tomatoes for your green tomatoes and it should work out spot on!
Hope it works out for you!.

Roast Tomato Chutney

10 ripe roma tomatoes (peeled and cored)
1 onion Cut in half through the core, skin intact
1 bulb garlic, cloves separated
100ml olive oil
1 T brown sugar
Salt & fresh ground black pepper

Pre heat oven to 180oc!.
Lightly smear a roasting tray with some of the olive oil!. Arrange the tomatoes and onions cut side down!. Tuck the garlic in between, drizzle with the remaining oil!.
Bake for 30 mins!. Remove from the oven to cool slightly!. Discard the onion skin and finely slice!. Peel the garlic and chop coarsely!. Cut the tomatoes into ? !. Tip everything from the tray especially the juices into a pan!. Season with salt, pepper and sugar!. Simmer gently until the chutney is thick and onions tender!. Allow to cool and place in sterile jars to store!. Will keep for up to 2 weeks in a sealed container!.

Put some in a brown paper bag with a banana and then put in the dark and in couple of weeks you will have red eatable ones!
