Deli meat has a shiny rainbow looking color to it?!

Question: Deli meat has a shiny rainbow looking color to it!?
Last night I went grocery shopping and when I got home I started to make a sandwhich!. I noticed on the slices corned beef and pastrami there was like an iridecent/rainbowy look to it!. Like pinks and orangey colors!.

the meat wasn't slimy or anything!. Just looked like it was growing fish scales!

What does this mean!? Has it gone bad!?

I've never noticed it beforeWww@FoodAQ@Com

Answers:
No, it's perfectly fine!. If some of it is dried and curly on the edges, you probably don't want to eat it!.

"9!. What causes iridescent colors on meats!?
Meat contains iron, fat, and other compounds!. When light hits a slice of meat, it splits into colors like a rainbow!. There are various pigments in meat compounds that can give it an iridescent or greenish cast when exposed to heat and processing!. Wrapping the meat in airtight packages and storing it away from light will help prevent this situation!. Iridescence does not represent decreased quality or safety of the meat!. "

lol, A lot of meats do this!. I don't think that its anything to worry about!. I'd guess it was the natural oils inside the meat!.(fat) If you are really worried about it you can ask your local butcher!. He will be glad to answer your questions!.Www@FoodAQ@Com

If your meat was liver sausage or bologna, I'd say don't eat it!. But since corned beef and pastrami are both made from beef brisket, the phenomenon you're describing is quite common!. It's good to eat!.
