To make a proper bread flour, you need need a hard winter wheat!. Unless you are the Little Red Hen, I highly recommend taking a slightly shorter route to your final goal and purchasing some wheat berries!. Bob's Red Mill has an amazing stone ground mill in Oregon and stocks and ships these and many other items all over the county!. many of them organic!. His bread flour can't be beat if you want to do it really fast!. If you want to stay local, most states have similar operations such as King Arthur on the East Coast!. Check you local health food or nutrition store for a good selection!.
Be sure to invest in a high-grade yeast as well!. i would recommend SAF!. Avoid more commercial yeasts such as Flieschmann's and RedStar if you are trying to stay away from preservatives and other nasties!.Www@FoodAQ@Com
