Question: Why are there so many different kinds of olives and only one type of olive oil!?
i went to a specialty grocery and they had several kinds of olives in bulk bins!. What are there so many kinds, but there aren't several kinds of olive oil!. Www@FoodAQ@Com

Kalamata olives are for eating mostly they are a black variety!. However the name Kalamata is like a brand like champagne so its played up a bit in my humble opinion!.

Greek olive oil is mostly from green olives in the villages and depending on the processing is rated differently, like virgin, extra and some others I havent noticed around much outside Greece!. Italy and Spain produce wonderful oils!. The med has the climate and the soil for wonderful olives!. We have a few paddocks of 200 year plus olive trees at the village!. There are government and EU subsidies for the produce of oil and many in the villages and the islands make it as a sideline!.

In countries which adhere to the standards of the IOOC[3] the labels in stores show an oil's grade!. The US is not a member!.

Extra-virgin olive oil (EVOO) comes from cold pressing of the olives, contains no more than 0!.8% acidity, and is judged to have a superior taste!. Extra-virgin and virgin olive oil may not contain refined oil!.

Virgin olive oil has an acidity less than 2%, and is judged to have a good taste!.

Pure olive oil!. Oils labeled as Pure olive oil or Olive oil are usually a blend of refined and virgin or extra-virgin oil!.

Olive oil is a blend of virgin oil and refined oil, of no more than 1!.5% acidity!. It commonly lacks a strong flavor!.

Olive-pomace oil is a blend of refined pomace olive oil and possibly some virgin oil!. It is fit for consumption, but may not be described simply as olive oil!. Olive-pomace oil is rarely sold at retail; it is often used for certain kinds of cooking in restaurants!.

Olive Oils are made from all types of olives depending on the country of origin ie!. if the olive oils is greek its probably a kalamata oil the best to get is Extra Virgin cold press, this ensures you get the first press oil and the best quality!.Www@FoodAQ@Com
