Here's the recipe I use!. It's so versatile, you can serve it with chips, fish, shrimp, pork tenderloin , etc (probably not so good with beef)!.
Make sure your mango is ripe, soft to the touch, but not mushy!. Be careful peeling and slicing it off the pit - it can be tricky and you can easily cut yourself!. I hold it on it's end and slice down with my knife, turning as I slice off the peel!. Keep it in the same position, and carve around the pit - which is quite large!.

Mango Salsa
1 mango, peeled and diced
1/2 cup peeled, diced cucumber
1 tablespoon finely chopped jalapeno
1/3 cup diced red onion
1 tablespoon lime juice
1/3 cup roughly chopped cilantro leaves
Salt and pepper

Combine the mango, cucumber, jalapeno, red onion, lime juice and cilantro leaves and mix well!. Season with salt and pepper, to taste!.

Yes!. I prefer mango salsa that's a bit on the hot side- it's sweet, spicy, and very refreshing!. It's good with any kind of chips, but I prefer eating tomato-based salsa with chips!. Mango salsa is excellent with grilled or broiled fish, or with seafood!. I've never had it with pork or chicken, but I assume it would taste really good!.

Many years ago!. I do believe I enjoyed it!. I think it was with a Chinese Cuban dish that we had at a restaurant called Byamo's in the Village!. I cannot recall what we had with it, but I do remember the unique flavor!.Www@FoodAQ@Com

i've tried and personally i like regular salsa better, but that's just me!. Mango salsa tastes more "cold" fruity, and idk less like traditional salsa!. i like traditional salsa :)Www@FoodAQ@Com

Ooh! I love it with baked tostito scoops, or try it on a chicken casadilla with a wrap and cut up chicken, cheese and spoon it in there and put the other wrap on top!.
