Is it safe to immediately put food in the fridge right out of the microwave?!


Question: Is it safe to immediately put food in the fridge right out of the microwave!?
Or does bacteria form because of the sudden temperature change, or something similar!? I think someone was telling me it's unhealthy but I'm not sure!.Www@FoodAQ@Com

It depends on the density of the item!.
For instance a steak would be ok because it would cool off in the allotted time according to the rules of HACCP!.
Beef stew or some dense would need to be cooled with either a cooling wand or spread out thinly for an hour before refrigerating!.
Keep in mind that a pot of chili or beef stew would takes 12 to 24 hours to cool in the middle due to the density, that means bacteria has gone rampant and it would be unsafe to consume!.

Stir it after it comes out of the microwave, then stir it again after 5 minutes!.
You want to get the center cooled a bit!. Then refrigerate uncovered for an hour!.Stir again!.

It's ok if you want to heat up everything else in your fridge!. The item will radiate heat - if you don't want to risk possible food contamination I'd cool the item first by putting it in a bag and into an ice bath for 20-30 mins!. This way the item gets cooled and everything in your fridge stays the correct temperature!.Www@FoodAQ@Com

I think it depends what it is, but for most food, it's fine!. Bacteria doesn't grow from sudden temperature changes!. Usually for bacteria to thrive, they require a warm moist environment!.Www@FoodAQ@Com
