Question: Any Sugar-Free Desserts Out There!? No Splenda!!?
I'm going to a family reunion next weekend and I have a cousin who's diabetic and cannot have sugar!. There's always a ton of desserts available but she can't have any of them ~ she requested I bring something sugar-free this year!.

I refuse to buy Splenda because I think it's icky!.

What about a trifle made of angel food cake, fresh fruit and sugar-free Cool Whip!? Is that fairly low in sugar!?

Mandarin Orange Salad (Healthy)
serves 8

1 small sugar free orange jell-o
1 cup boiling water
1/2 cup cold water
8 oz crushed pineapple in own juice, undrained
11 oz mandarin oranges, rinsed and drained
3/4 cup plain fat free yogurt
1/3 cup dry milk
1 cup cool whip lite

Combine dry jello and boiling water
Stir in cold water and pineapple with juice
Blend in oranges
Refrigerate for 30 min
In another bowl combine yogurt and dry milk
Blend in cool whip
Fold yogurt mixture into jello mixture
Pour in 8 x 8 dish
Refrogerate for 4 hours
Cut into 8 pieces

Pistachio Fruit Salad

serves 6 ( 2/3 cup)

1 small sugar free jello pistachio pudding mix
2/3 cup nonfat dry milk powder
1 - 8 0z can crushed pineapple, packed in fruit juice, drain and reserve liquid
water
1/2 cup cool whip lite
1 medium diced banana
2 cups sliced fresh strawberries
1/2 cup mini marshmallows

Combine dry pudding mix, and dry milk powder
Add enough water to reserved pineapple juice to 1 1/4 cup of liquid
Add liquid to dry mixture
Mix well with whisk
Blend in Cool whip
Add pineapple, banana, strawberries and marshmallows
Mix gently
Refridgerate 30 min
Stir again

1 serving =
125 calories

26 gm carb
262 mg sodium
1 gm fiber







I like to make cherry delight with this
Make the pie filling
Then make the gram crax crust or you can use the one from the store!.
Take cream cheese, cool whip and some equal to taste
Spread a layer of that and top with pie filling

Cherry Pie Filling ( Healthy)
serves 8

1 small jell-0 sugar free vanilla cook and serve pudding mix
1 small jell-o sugar free cherry jello
1 1/4 cup water
16 ounce can tart cherries in water, drained

In pan combine dry pudding mix
dry jello, water, and cherries
Cook over med heat
Stirr constantly until mixture thickens and starts to boil
Remove from heat
Allow to cool and use as canned pie filling

Or you could the filling in parfaits



Pumpkin Maple Pie
serves 8

1 graham cracker crust
2 small pkg, Instant sugar free butterscotch pudding
1 1/3 cup carnation nonfat dry milk powder
1 can pumpkin ( 15 oz )
1/2 cup water
1/2 cup Cary's sugar free maple syrup
2 tsp pumpkin pie spice
1 1/2 cup cool whip lite

1/4 cup chopped pecans ( opt)

In large bowl, combine dry pudding mix,and dry milk
Add pumpkin, water, maple syrup, and p!. pie spice
Mix well, using whisk
Spread mixture over pie crust

Refrigerate for 5 min
Spread cool whip over pie
Cover and refrigerate for 20 min
Cut into 8 servings

Strawberry Cheesecake
Prep Time: 15 Minutes
Servings: 10

24 ounces cream cheese
4 eggs
1 cup strawberry pourable fruit
2 teaspoons vanilla
1 cup sour cream
1 teaspoon vanilla
1 cup sour cream
1/4 teaspoon salt
Strawberries, sliced
Preheat oven to 325 degrees F!.

Beat softened cream cheese in large bowl until creamy!. Blend in pourable fruit, vanilla, and salt!. Add eggs, one at a time, beating well after each addition!. Pour into greased 9" springform pan!. Bake for 50 minutes!.

Combine sour cream and vanilla; mix well!. Carefully spoon over warm cheesecake!. Bake another 10 minutes, or until just set!.

Turn oven off and leave cheesecake in oven, with door closed for 30 minutes!. Transfer to wire rack and loosen cheesecake from rim of pan!. Cool overnight!. Just before serving, garnish with sliced strawberries!.

Your idea sounds good, but I think sugar free Cool Whip has Splenda in it, and, depending on the angel cake, there may be too much glucose for a diabetic!. Be careful about "fairly low" in sugar - diabetics have to monitor what they eat very closely, and even a bit of glucose can throw off their insulin levels!. Better not to use sugar at all!. Careful too with sweeteners, many of them are still high in glucose, which is dangerous for diabetics!. Try stevia, which you can find in health food stores, and which is fully natural!.
Simple, tasty: cook oatmeal in coconut milk!. Use less coconut milk if you prefer it firmer, more if you prefer something like a pudding!. You can use this as pie filling (make sure the crust is sugar-free, or make your own with melted butter and sugar-free cracker crumbs), or put some in a mold lined in plastic wrap, cool it in the fridge and tip it out, or even layer with (sugar free) cool whip sugar-free jams and crushed nuts to make a trifle, or use your imagination!. Another simple one is making baked apples - if you use a sweeter variety, you don't need to add sugar, and you can use cinnamon and nuts to add interest!.
