Okra is mainly the part that thickens the gumbo!. Substitute a roux instead!. Equal parts of butter and flour!. Heat the butter in the skillet and then fry the flour in it for a few minutes then add the liquid and other ingredients!. Two tablespoons of butter and flour thicken 4 cups of liquid!. If you are making 8 servings use 4 tablespoons of each!.

You also may cut the cooking time a little bit too!. You'll know when it's done!. :)Www@FoodAQ@Com

Uh, gumbo isn't gumbo if it doesn't have okra in it! :)

Seriously, you can substitute something called "file powder" which is available in some supermarkets!. It's ground sassafras leaves and it provides the thickness that the okra provides!.Www@FoodAQ@Com

Okra is used in gumbo to aid as a thickener, but you already have your roux for that!. I make gumbo, and I don't put okra in it and it is delicious!. You don't a substitute just omit it!. I use two of Emerils gumbo recipes, and he doesn't add okra!.Www@FoodAQ@Com

I can only tolerate okra when it's in gumbo, but if you must make a substitute, try zucchini, sliced and cut in half or quarters!. Looks similar, tastes better!.

I just made a gumbo this weekend! You can leave the okra out it won't hurt anything!. I always have to take some gumbo out before I put the okra and green onions in for my picky eaters!.Www@FoodAQ@Com

leave it out, I never put it in!. And Gumbo by definition does not contain Okra!. Unless it is a Okra gumbo!. Www@FoodAQ@Com
