It intensifies the taste by awakening the taste buds!. Sodium chloride (table salt) makes the tongue more sensitive, but then if you are like me you like the taste of salt anyway!.Www@FoodAQ@Com

It has a tendency of drying out the food!. Using sauces such as soya sauce will dry out meats when being used as a marinade!.Www@FoodAQ@Com
