PANCAKE BATTER;
100g/4oz plain or self raising flour
Large pinch of salt
1 standard egg
250ml/ half a pint milk
1 tablespoon melted butter
1!. Sift flour and salt into a bowl!.
2!. Beat to smooth creamy batter with unbeaten egg, half the milk and melted butter!.
3!. Stir in remaining milk and use as required!.
FRITTER & COATING BATTER;
Sweet Fritter Batter - for coating fruit
50g/2oz plain flour
Pinch of salt
1 level tsp sifted icing sugar
4 tbsps lukewarm water
2tsps melted butter
White of 1 standard egg
1!. Sift Flour and salt into bowl!. Add sugar!.
2!. Gradually mix to thick smooth batter with water and butter!.
3!. Whisk egg white to stiff snow!.
4!. Fold into flour mixture!. Use as required!.
Coating Batter - for fish meat and veg!.

125ml/ quarter of a pint milk!.

Batter can be frozen: Pour into rigid containers, leaving half - 1 inch headspace!. Seal and freeze, remembering to keep the containers upright until batter is frozen!.
Recommended freezer life: 3 months!.
To Use: leave the batter to thaw for at least 2hrs!.

1-1/2 tsp!. baking powder
1/2 tsp!. dry mustard
1 beaten egg
3/4 cup milk
2 Tbs!. oil
Shortening or oil for deep fat frying
Pat frankfurters dry with paper towels!. If desired, insert a wooden
skew into one end of each frank!. Set aside!. Combine flour,
cornmeal, sugar, baking powder and dry mustard!. Combine egg, milk
and the 2 tablespoons oil!. Add to dry ingredients; mix well!.
(Batter will be thick)!. Coat franks with batter!. In a large skillet,
fry franks 3 at a time in 3/4 inch hot shortening (375 degrees),
turning with tongs after 10 seconds to prevent batter from sliding
off!. Cook 3 minutes more; turn again after 1-1/2 minutes!. Serve
with ketchup and mustard if desired
