There are really two answers: before and after!. The selection depends somewhat on what you want your stew to look like!. In both cases, you should braise your stew meat first!. Get a good carmalized coating all over!. This takes about 60 to 90 seconds a side!. Then, deglaze the pan with a little wine!. If you want the stew meat to be really tender and fall apart in the stew, put it back in with the other ingredients and stew away!. If you want your meat to retain some of the texture, then add it back when the vegetables are about 75% cook to your taste!. Www@FoodAQ@Com
First toss your stewing beef in flour, then fry until browned!. Then you can add it to your stew ingredients!. Let the stew simmer on low for at least 6-8 hours in order to tenderize the meat!. Before or after what!? I always cook the stew meat first!. It takes a long time for the meat to cook and become tender if you're using actual stewing beef!. The vegetables don't take nearly as long!. If you add everything together in the beginning you'll have mushy vegetables!. Www@FoodAQ@Com

i make stew every day, put meat and onions in a pot and simmer for 1 1/2 hours then put veg in, simmer untill tender put doughboys in 40 m before end !. use shin of beef!. no gravy, not needed, salt & pepper to tasteWww@FoodAQ@Com
