Answers:
Roast a chicken during the weekend!. From the left-over's, make:
- chicken tacos
- chicken salad sandwiches
- chicken noodle soup (using the bones)
- pasta with chicken & your favorite veggie

Likewise if you grill a large cut of steak, you can use the leftovers to make:
- beef fajitas
- beef salad
- pho (thai soup over thinly sliced fairly rare meat)
- shredded beef sandwhiches with BBQ sauce

If you do a large turkey breast, the week's meals could include:
- turkey sandwiches
- turkey tetrazinni
- turkey nachoes
- turkey noodle soup

If you have only one day to cook then make several dishes and package them to go in the freezer to use later in the week!. If you do this several weeks in a row you can have several choices rather than eating just one dish each week!. Www@FoodAQ@Com

Ahh the question I wondered myself at times!. Here are two ideas I can think of right now!.

1) Fried rice is easy to make in large batches!. Check my shrimp fried rice recipe here:

2) Empanada's are a good idea too!. You just make the pastry and make a couple of different stuffings (maybe one beef, one chicken, one with pumpkin, etc) so you don't get bored!.

Try tacos!. I made some last week and it lasted a whole week because it only takes a couple of tablespoons of meat to fill the shell!. Mostacolli is good, it's a pasta dish and it last a long time!. You make it just like you would spaghetti!.Www@FoodAQ@Com
