What does it mean when a sauce splits?!
What do people mean when they are talking about food and they say be careful it may split etc!.!.!.!.
Its obviously not a good thing, so why is it so bad!. What does it mean!

I think the term is "separate", not split!. Things like oil & vinegar don't combine well together and have to be well whisked to keep them homoginized; or you'll have oil with clumps of vinegar in it !.!.!. sauces like Hollandaise may separate too; and even homemade mayonnaise will separate - unless they are cooked slowly and constantly whisked!. They look and taste terrible, if separated!.!.!.!.!.!.!.Www@FoodAQ@Com
I am no cook but I imagine it means the rather than combining the ingredients to create a flavour it is has been overcooked so the ingredients have split up againWww@FoodAQ@Com
It means the ingredients that you have used in your sauce has separated, and it looks as though the sauce has curdled!.Www@FoodAQ@Com
