Question: Can anyone PLEASE tell me why my cakes look like a mountain after they are baked!.!.!.!?
No matter how much I shake the cake pans or drop them on the floor to flatten the batter, they still come out with a hump in the middle!. WHY!?!? Thank you very muchWww@FoodAQ@Com

Usually this happens because the edges of the cake cook first, then the rest of the cake can only rise in the uncooked center!. You can avoid this by starting the cake out on a lower oven temp for the 1st half of cooking time, then raise to the usual!. This will give the sides equal time to rise with the rest of the cake!. I make all my cakes like this and they generally turn out fairly even!. There is also a product call Even Bake strips from Wilton (cake decorating company)!. These are metallic lined strips that you soak in water and then wrap around your cake pan before baking!. The water soaked strips help keep the edges of the pan cool so the cake can rise evenly!. I have used them before with good success!. It just requires an extra step in preparation!. Try either of these two options and you should be making relatively level cakes in the future!. i can't tell you why that happens, but whenever mine do that, I take a long knife, and cut off the "mountain" part, to make it a flat surface, then I flip it over and frost the opposite side (cause the cut side will crumble more than the other side)

to add another thought - I know that while the cake is baking, if you "slam" the oven door, sometimes the center of your cake will fall (which under normal circumstances will make your cake turn out badly) - but maybe, since your centers are rising!.!.!. maybe it would fall and turn out flat!?!? :)Www@FoodAQ@Com

you might have put too much baking soda or baking powder!. Make sure your measurements are correct!. also the temperature of your oven is probably too high!. Another reason might be because you have too much batter in your cake pan!. The pan might be too small for the amount of cake batter!. you probably shouldnt shake your pan too much, this will cause your cake to become dense and not nice and fluffy!. tap it lightly a few times on the table!. What sort of cake pans are you using!? Are they dark-colored on the outside!?

Good quality cake pans are thick-walled and silver on the interior and exterior and provide even heat to the cake batter!. Flimsy pans can make for uneven baking and domed cake tops!.

You can always use a good serrated bread knife to cut the dome off the cake before you frost it!. Www@FoodAQ@Com

Try this!.!.!.!.!.Before you put your pan in the oven take a deep cookie sheet or pan and fill the bottom part with water!. Then take your pan with the cake mix in it and put it inside the water will even out the temp and your cake should not collapse!. It's called water chamber baking!. Www@FoodAQ@Com
