To my taste, the very best ham in the world are Italian!.

Ham in Italy comes as crudo ( uncooked ) or cotto ( cooked )!.
They are very different in flavour and looks!.
Cotto is pink and soft to the palate!.
Crudo is reddish, and comes in a great variety of styles, mostly described as salted, sweet or "half sweet"!.

Crudo ham is very lean, very tasty, and comes from meat reared in parts of the country located well away from highway traffic, most notably Parma ( you will have heard of Parma Ham ) and San Daniele del Friuli, on the North -East side of the country!.
Highways were in fact planned away from these areas, can you imagine!, because of how special this produce is!.
The animal are reared and then later the meat cured in pollution-free air!.
This gives an unique flavour to the meat: rich yet subtle, it develops in the mouth leaving rich aftertastes!.

German ham, delicious as it is, is much coarser and contains a lot more fat and spices, which "hide" the real taste of the meat!. Spanish Jamon Serrano is very good, but is always cut in such thick slabs to kill any subtlety the meat can have!.

So it is back to Italian hams, and Tuscan ham is also very noteworthy - wrapped around figs, at this time of the year, it is nothing short than food for the gods!

The world-famous ham from the town of Jabugo is one of the most highly-prized dishes in Spanish gastronomy!. Jabugo is situated in the central part of the Sierra de Huelva mountain range, to the north of the province and is 642 metres above sea level!.
Although some Jabugo are exported to Andorra, France, Germany, Italy, Switzerland, Holland, the United Kingdom, Belgium and Portugal, most of it remains in Spain and is enthusiastically consumed at home, mainly in Madrid, the Basque Country and Catalonia then in Seville, Cádiz and Valencia!.
The town's ham industry in currently in the process of preparing a new seal of quality to identify its products, as the word 'Jabugo' has become synonymous among the Spanish with quality, rather than the origin of the products!.
Jabugo ham tastes so good that even emirs who were forbidden from eating pork by their religion, have often been unable to resist it!. In Marbella it is gobbled up by the jet-set and rich Arabs and has been a great favourite with the Spanish royal family throughout generations!.
Eleven companies in the area produce around a million hams a year, and 70% of Huelva's pork product production, from around a quarter of a million specially produced, acorn-fed pigs a year!.
Legend has it that Jabugo ham was born when a pig fell into a very salty stream!. The pig was pulled out of the water by some shepherds who roasted it and greatly enjoyed the pleasant flavour of the meat, especially the leg!. From then onwards they salted the meat as nature had showed!. Salted meat was also seen to remain in perfect condition for much longer periods of time!.
The strong smell of cured ham fills the streets of the town of Jabugo in the north of Huelva, spilling out from bodegas and curing houses!. Jabugo 'gold' is high in unsaturated fats and miners and very healthy as well as exquisite-tasting!.
There are considerable differences between the Iberian pigs used to make Jabugo and the white pigs used to make lesser products!. The Iberian pig is native to the peninsula, whilst the white pig has been developed for maximum, fast, economical meat production!.
The development of the Iberian pig is practically uninfluenced by the meddling hand of Man, meaning the meat produced by each variety is totally different!. that obtained from Iberian pigs being of higher quality!. An acorn-fed Iberian pork contains 56% oleic acid as opposed to mass produced pork (46%), beef (42%), chicken (34%) and lamb (43%)!.
Jabugo ham contains concentrated vitamins and minerals (calcium, magnesium, sodium) that reduce free radicals!. It isn't going to make you younger, but eating it certainly won't do you any harm as it reduces the risk of developing cardiovascular disease and helps lower bad cholesterol!. It is also high in protein and calcium and also contains vitamin B!. Jabugo ham low in calories and contains no carbohydrates - just water, protein and fat!. As it cures, the ham dries out and loses a lot of water!. One hundred grams of Iberian ham has around 242 calories, making it a much better choice than most other types of cold meat!.
You are not likely to consume an entire ham at one sitting, so remember to cover the meat not covered in protective fat with a thin cloth!. Keep the ham in a dry, well-ventilated place at room temperature and away from extreme heat or cold!. Jabugo ham should be carefully hand carved using a sharp knife with a long thin blade!.

In fact, if you wish one for Thanksgiving or Christmas, you have to call ahead and reserve one or take your chances on getting one then!. It's fully cooked, and even great cold!. I've never ever had to throw any away!.
