How do you store fats and oils?!

I store Oils for cooking in dark green wine bottles, less than 1 quart at a time!. The larger bottles are stored in a cool dark place and poured into the wine bottles when they get low!.
The oil I use for deep frying (extra light olive oil) is cooled, filtered and stored in vacuum sealed mason jars, in the fridge!.Www@FoodAQ@Com

I put them on the counter!. I use only ghee as frying oil!.
For olive oil for salad, I store them on the counter if I know I am going to finish within 6 months (which I do because I eat lots of salad)!.Www@FoodAQ@Com
