Answers:
The vacuum seal is important so that bacteria don't enter!. WHen pickles are canned in the factory, they are heated to kill any organisms, then the lids are put on and they are cooled, effectively creating a seal as the fluid inside contracts You may think bacteria can't hurt pickles because they are so acidic, but I have had pickles go bad once they are opened!. That's why you refreigerate them, too!.

THe other poster is also correct - a domed lid indicates that the vacuum seal has been broken, and warns you that other things may have had a chance to enter, such as microorgtanisms, or any number of other bad things!. Or maybe somebody just opened up the jar and helped themselves to one of the pickles inside! Either way, you wouldn't want to pay for that jar and take it home and consume its contents!. Remember the Tylenol incident of some years back!? People are strange out there!

So here's my poem on this subject:

A Picklish Situation

When flat is the dome,
Then take the jar home,
And feel free
to consume every gherkin!.
But if the jar's top
Shows signs of a pop,
Leave it be,
'cause its mojo's not workin' !
Don't taste and say "huh!?,"
For bacteria
May not stink,
or look gross, or taste deadly!.
Best leave on the shelf
And say to yourself,
"Hmm, I think
I'll have coleslaw instead-ly!"
With caution well-played,
You'll dodge a parade
Of Leeuwenhoek's
famous "wee beasties" --
And you'll want to kiss him,
Because botulism
Is fatal, from food or from feces!

I know that's a little gross, but it rhymed well, so there you have it!.

My source is my high school biology class taught by one of my favorite teachers, Al Tomlinson, who loved to show us all the disgusting things in pond water using our old reflective microscopes and who related the story of Leeuwenhoek's discovery of one-celled creatures with gusto and relish -- which by the way is another pickled product that comes in a jar with a vacuum seal!. Wow, we have come full circle!.

It's not a safety button!. It's a seal!. If the airtight seal is broken, the fact that the lid is raised (pressure was released) lets you know that the jar has been opened!.Www@FoodAQ@Com

they are on most glass jars!. when its down the jar is sealed proper and when the button is up that means the jar has been opened or the seal is bad and you don't want to buy it!.Www@FoodAQ@Com
