I too am making cream of broccoli soup this weekend!.
Easy Cream of Broccoli Soup
INGREDIENTS
3 cups water
2 teaspoons salt
1 cup chopped broccoli
2 tablespoons butter
3 tablespoons all-purpose flour
14 1/2 ounces evaporated milk
1 cup water
1 1/2 teaspoons grated onion
1 1/2 teaspoons salt
DIRECTIONS
In a medium saucepan, bring 3 cups water and salt to a boil!. Cook broccoli in boiling water, uncovered, for 10 to 12 minutes!. Drain, place broccoli in a small bowl, and mash!.
Melt butter in a large saucepan over medium heat!. Mix in flour, and then gradually whisk in milk and water; stir continuously until liquid begins to boil!. Stir in grated onion and mashed broccoli!. Season with remaining salt!.

Not your mama's potato soup- my mom loved the name, her potato soup was not very good!. My son is very lucky!
I start with bacon, any where from 3-5 strips- start it low and slow to render out as much fat as you can!. I then add red bell pepper and onion, diced small!. When they become tender I add 2 cups diced potatoes and 3 cups chicken stock!. I bring it all to a simmer and cook until potatoes are tender!. I whirl it with an immersion blender, then season with salt, pepper, dill, a pinch of cayenne, and a pinch of nutmeg!. I add 1 cup of heavy cream and then stir in a bag of Kraft Crumbles!.Www@FoodAQ@Com

My mom used to make this really good vegetable soup wth skinned slcied potatoes, carrots, green beans,can corn,onions very tiny cut up onion pieces and grouded up hamburger meat!. She mae the coup by adding water and I THINK tomato sauce with seasonings and then we dipped dinner rolls into it!. So Good!!!Www@FoodAQ@Com
