Question: How come the Ice cream doesn't melt in a baked Alaska !?

The merigue acts as an INSULATOR !.!.!.!.!.therefore when the ice cream is encased fully !.!.it will not melt !.!.!.!.despite the hot temp!.

See what happens is the Ice Cream is frozen rock hard after it is being encased with the merinque, thus the dish is chilled enough so that it doent melt!.!.!. anyways when it is gratinated heat doesnt reach till the ice cream !.!.hence the trick!.!.!.Www@FoodAQ@Com

Because the oven is very very hot (like 500oF) and the outside meringue cooks in just a moment or two!. also the icecream should be frozen very hard, at a very low temperature!.

Icecream fritters work on the same principle!.Www@FoodAQ@Com

Because the pudding is baked in the oven at a high temp to cook the meringue, it isnt in for too long so therefore the ice cream doesnt meltWww@FoodAQ@Com
