'Night before' healthy pasta ideas ?!


Question: 'Night before' healthy pasta ideas !?
I need some ideas for a simple pasta lunch!. I go to work at 7am so I need to be able to make the night before!. Am not keen on tomato based pastas, something with chicken or tuna would be nice but not sure what to dress it with!. Needs to be healthy!.

this might sound boring but it's healthy and quick to prepare

i have pasta with tuna, some chopped fresh herbs (whatever you like), some crushed black peppercorns and some fresh lemon juiceWww@FoodAQ@Com

Quick Creamy chicken and mushroom pasta:

1!. Prepare a packet of the low-fat vegetable soup according to the instructions (usually adding boiling water)!. Use a large bowl/pot!.

2!. Prepare pasta as per instructions!.

3!. In a saucepan, saute some mushrooms and onions in olive oil, add chicken strips and brown then add some green and red bell peppers and saute over medium heat for a few minutes!.

4!. Add the above contents of the saucepan into the prepared veg soup!. Stir in some shredded low-fat cheddar or gouda cheese!. Sprinkle with some mixed herbs and salt and pepper to taste!.

Tip: The veg soup has plenty of flavour and salt so added salt and pepper may not be necessary!. i usually do not need to add anything to the pasta or the saucepan ingredients and if you use a large bowl to prepare the veg soup it makes for less dishes and clean-up when the rest is added to it later!.
5!. Spoon over the pasta and serve!.

This is pretty quick and delicious!.

Mediteranean Pasta Salad:

Cook pasta as per instructions!.

Slice off a qtr piece of both red and yellow peppers (remove seeds)!.
Cover in olive oil, and sea salt!.
Grill with skin facing heat until skin becomes slightly charred!.
Peel skin and chop into strips!.

Chop a few large slices of aubergines, courgettes and red onion!.
Add a little olive oil, sea salt and cracked pepper!.
Stick under grill for few mins until browning on edges!.
Turn over and repeat!.

Mix all veg with pasta, and stir with olive oil!.
Add a small covering of parmesan cheese and basil herbs!.

- Takes about 15 mins to make!. A lot easier than it sounds!. Very healthy, and very yummy!Www@FoodAQ@Com

Take shredded chicken however you want to cook it or you can buy from the store!. Get a can of cream of chicken soup or cream of mushroom soup!. Flat egg noodles and mixed veggies (Peas, Carrots)!.

Make the soup as directed, cook noodles!. combine the mixture and you are ready to heat and eat!. Www@FoodAQ@Com
