Yes, both do, but you have to be careful here!. Most people who want to eat bison do so with the assumption that it is a better meat for you!. Unfortunately, it is illegal to sell "game" commercially, so all bison in the United States that is sold is farm raised!. Now, some of this is free-range bison, however, most of it is bison that is fed the same hideous diet that they do to beef cattle, which marbles the meat and damages its naturally healthful Omega-6/Omega-3 ratio!.

In the wild, bison has a Omega 6/Omega-3 ratio of roughly 2:1, which is very good and similar to wild salmon!. It is also why wild animals taste "gamey"!. Farm raised, corn fed animals are raised in a manner and fed a diet that forces their muscles to become infiltrated with fat (we call this marbling)!. Unfortunately, eating this meat has a tendency to do to you what the diet did to the cow, it forces fat to striate into the muscle tissue, organs, and blood vessels!.

When buying "exotic" meats, make sure the packaging says two things: free range and grass fed!. Then the meat will contain the positive health qualities I am sure you are looking for!.Www@FoodAQ@Com
