How do you judge how good a chef is?!

I am a former chef and worked internationally, and Betty raises a good point, I would also add they have to be able to work and interchange with the trends and times, while for me the classical french ways are tried and true, the fusion ideas of today are very well received, I was in the business during the late Nouvelle period and the California craze of the 1980's, and did use may of the foods and ingredients popular today!.
To judge some one a good chef he/she has to be a good all round cook, supervisor, communicator, administrator, business person and a very good manager!. I kept up with the times and now a days it is alos important to be flexible and up to date!. Those TV chef's have more visual presence, most are good cooks, but for me it has to be an all round type of person and know the business in and out!.Www@FoodAQ@Com

A chef in a restaurant has to have a lot of skills!. Being able to cook well is only one of those skills!. A chef must be assertive, be a good communicator, willing to work as part of a team, must be able to multitask and to move quickly, must be a good public speaker, the ability to manage a restaurant crew well, be able to make quick decisions and must be able to delegate!. They must be clean and neat in appearance and well organized!. They also must have knowledge, taste and skill when it comes to cooking and writing menus!. They must have the ability to create their own recipes and to cater to the needs of the customer!.Www@FoodAQ@Com
Chef as in just a cook or as in the one in charge of the kitchen!? Well a good chef is someone who can make food that's not only tasty, but also looks good and is nutritious (why do you think culinary students have to study nutrition!?) under different circumstances, have a good pallet and "understand" food!.
