Mix some canned pumpkin in the batter!.
Dried fruits!. I have great varieties available in my area!. I've done pancakes with dried versions of strawberries, blueberries and bing cherries!. All gave great results!.

almond, hazelnut, mohca (there's a recipe but I can't think of it off the top of my head), chocolate chips, blue berries, raspberries, black berries (YUM!), all kinds of berries really, bananas, walnuts, bananas and walnuts (especially good w/a vanilla cream sauce in place of syrup), there's all kinds of stuff you can do with pancakes, all you need is a few bucks and an imagination=]Www@FoodAQ@Com
