Is hickory smoked bacon smoked on an actual wooden fire?!


Question: Is hickory smoked bacon smoked on an actual wooden fire!?
Do they actually make a wood fire and put it over the smoke, or do they treat the bacon with a chemical that makes it taste smoked!?Www@FoodAQ@Com

Most commercial smoked bacon is flavored by coating it in a seasoning that creates a smoky taste!.

Generally commercially produced hickory smoked bacon is in fact smoked!. Pork bellies are sent through a machine that injects a liquid cure into them!. They are then hung on racks and put into very large smokers!. Hickory saw dust is added to a hopper and this is heated to produce smoke that further cures and flavors the bellies through a process called cold smoking!. I have heard that some companies use liquid smoke in the injected cure or spray on liquid smoke to the outside!. Those would be low end products!. While other high end artisan smoke houses actually do the small smoking fire in the middle of the smoke shack!.Www@FoodAQ@Com
