If Cheese expired, How long is it still good for?!

As a former chef and can say it never really goes bad or expires, the other have very valid points, and aged cheese is much more flavourful, mold is common on cheese as it is part and parcel to the product!.
I would only throw out cheese that has really gone bad, cheddars and other hard cheeses take longer, soft cheeses like cream, cottage and other can go runny or sour, but as the one person said just trim it and use it, grate the cheese and it will last longer, even freezing it will also keep it, so if you buy large amounts, grate some and freeze the rest or store it in an air tight container, this aid in the preservationWww@FoodAQ@Com

If it's not gone hard or dry, smells the same, and hasn't got any mould on it, then it is fine in my opinion!. Expiry dates are there because the manufacturer has to put them there, with most foods you can just use your common sense!.Www@FoodAQ@Com
