When you boil veggies, the nutritional contents are lost in the water, but steaming is the best way!. Baking is good too but do not overcook veggies!.Www@FoodAQ@Com

I thought that steaming lost the least, but this website says it depends on what nutrient you are talking about!. Check it out!. It is too complicated to summarize!.

Prolonged boiling releases many nutrients into the water!.
Steaming is the best method!. Baking dries them out!.
Frying adds too much oil which can be a problem!.
Brushing with olive oil & roasting is good too!.Www@FoodAQ@Com

Not always!. The vitamins in some vegies are actually more accessible if those vegies are cooked!. Just be sure that you don't OVERcook them, tho!. Www@FoodAQ@Com
