It isn't cut from a steak or roast at all!. It is the parts of the beef that are still left on the bones as the steaks and roasts are cut!. Sometimes it is the excess from a roast so that the roast can be reduced in size to fit the sales tray!.

It is always the tougher parts of the beef, so it needs to be slow moist cooked to become tender!.Www@FoodAQ@Com

Usually it is made from outside round steak!. It is a cheaper cut, but is excellent in a slow cooker!.Www@FoodAQ@Com

Bottom round or any steak cut that hasn't oxidized (turned brown)Www@FoodAQ@Com
