Answers:
Growers store potatoes for 9-10 months (they have special storage sites) so you should be able to get a few weeks!. If your potatoes are molding it means they are too wet!. Probably came out of the refer and got some condensate on they!. Mold grows very well under moist conditions!. So first take them out of the plastic bag and keep them in a relatively dry atmosphere!. Next try to keep them in a cool but constant temperature room!. The cooler the better but do not refrigerate!. If you refrigerate them they will form sugars and when you go to cook them they will turn brown!. Its a natural defense mechanism kind of like antifreeze!.
Growers try to hold at about 50% RH and 45-50 degrees F!.
hope this helps

They should be stored in a cool, dry place (not refrigerator); best if you use a flour sack or other porous fabric material (not plastic)!.!.!.!.!.!.!.Www@FoodAQ@Com

average potato is stored at room tempature and will last 3-4 weeks so if your potatoes are growing mold on them it is the place you are buying them fromWww@FoodAQ@Com

Make sure they are dry and put them in a cool, dry place!. Www@FoodAQ@Com
