Why are old moldy hams more expensive than fresh hams?!

Question: Why are old moldy hams more expensive than fresh hams!?
Answers:
Curing ham is a time and labor intensive process, and it increases the natural flavor of the meat!.Www@FoodAQ@Com

Where are you seeing moldy old hams for sale!?

OK I looked this up on the web, and apparently hams that are cured the old fashioned way, and not just injected with brine like supermarket hams, are moldy on the outside while curing!.

So I'm guessing they're more expensive because it takes longer to cure and is a more hand-made product!. So there!. ^_^Www@FoodAQ@Com

LadyLola has it right!. Aged meats are time consuming!. They tend to be more flavorful and tender!. Beef steaks are also aged!.Www@FoodAQ@Com

I don't know!. They have never lasted long enough around my house to get moldy!.!.!. And a slice of moldy or fresh ham would go very good with my canned beans!.Www@FoodAQ@Com

Maybe the same reason that blue, moldy cheese is so expensiveWww@FoodAQ@Com
