Question: Why are some cheese!.!.!.!.!?
Why are some cheeses covered in wax!? Does it make it last longer or something!?Www@FoodAQ@Com

Usually soft cheeses or medium soft cheeses are covered in wax!. It does make the cheese last longer but more to the point the cheese doesn't dry out!. Take for example Edam - covered in wax it will remain medium soft and creamy but if you remove the wax then it starts to dry out and then it also loses flavour!. A great many soft and medium soft cheeses are covered in wax - I love all types of cheese!. Fresh curds are not covered in wax and neither are 'old' cheeses!. Some cheeses like Parmesan are aged and develop a firm outer skin on their own and although cut off when serving, this rind is excellent in flavouring soups & sauces!.Www@FoodAQ@Com
