I ama former chef and have worked in Japan, and I have never seen there nor here anyone use aspartame in the sushi, the seasoning for the rice is sake, vinegar and sugar, if they us aspartame it is the person or company's choice not traditional in anyway!.

For me I like mine unadulterated, no soya sauce even, a bit of wasabi and then the gari (pickled ginger) if you have found a place making it this way, I would ask why it is so, as some people have allergies to some chemicals, and a sickness from eating is often thought as food poisoning before anything else, so inquire for your own sake first!.Www@FoodAQ@Com
