Depending on what kind of cheese you are using, you could fake it and just melt the cheese on it's own in a double boiler before adding it to the mac!. Will not be as creamy, but the taste is still there!.

Or, try adding a tablespoon or two of sour cream to the cheese to melt it and make it creamier!. Gives it a nice kick!.

You could also cook your mac, then just grate some cheese over the top and melt it in the microwave!. Not true mac & cheese, but you still have the combo!.

had this problem my self and i used mayo for a sub!. worked out fairly well!. I guess the reason it did is because the oil in the mayo is the sub for the butter and the smoothness of the mayo takes care of the milk part!.Www@FoodAQ@Com
