I usually go by the thickness (thin is soup, thick is stew) but dictionary!.com doesn't have any real differences listed!. It looks like stew is generally meat-based and cooked slowly, while soup can have more ingredients (lots of vegetables, etc) and may be simmered but can also be boiled quickly!. Stew is mainly meat with veg!.
Soup is usually all veg either with lentils,split peas,or barley to thicken the soup up!.Www@FoodAQ@Com

I'd say the thickness!.!. soups are usually watery & stews usually have thicker broth and chunkier ingredients!.
