Question: My Santoku Knife Rusted - WHY!?
I bought a new knife and I used it last night and left it in the sink to wash in the morning!. I went to wash it and noticed the blade had rusted, it's high-carbon stainless steel!. It was not submerged in water, it was just sitting there!.Www@FoodAQ@Com


Answers:
High Carbon blades will rust more easily then Steel!. The higher carbon will also make it easier to sharpen as carbon is softer the steel!.

To care for a high carbon knife, wash the knife and dry right away!. If there is a lot of moisture in the air, you may have to deal with it often!. I have seen some people coat the knives in oil to put away, but I don't recommend that!. Wash your knive, you may use a soap filled steel wool pad (such as a SOS pad) then dry it!. To dry it, use a clean towel or if it there is a lot of moisture I have been known to turn my oven on for 5 minutes, turn it off and put the knife in there to dry!. It is slow and dry!.
Then always wash and dry the knife immediatly after use from now on!.

High Carbon steel will darken with just the moisture in the air!. You should always keep these HC knives clean and stored in a dry place!. HC is easier to get a good sharp edge on it and it will hold up pretty well, but you will have to deal with the darkening issue!. Stainless steel on the other hand is easier to keep nice looking but harder to keep sharp and harder to sharpen!.Www@FoodAQ@Com
