I am a former chef and everytime this question appear I wonder why!?!? they do not use scraps or other useless meat, and those pieces you spoke of are all fat and grissle and would make the hot dog/wiener like chewing a rubber hose, while the choicest cuts are not used you need a combination of fat and lean for any sausage even hot dogs, it can be one like beef, pork, chicken or turkey, some will use multiple meats for cost and flavour/texture!.
The best ar good all beef like Sabrets and Hebrew National in the US here in canada we have the Schneider's and Shopsy beef brand that when I ate them were my choices, the national brands like Oscar Mayer and other use a combo of meats, if you have a good german or polish deli that makes and smoke there own meats you have try a european style one, you may never go back to store bought again, I did!.Www@FoodAQ@Com

Hi Platinum, that is very untrue, take the time out and go on one of the tours of the processing plants, you will be quite surprised and very interested in what you will see as well as informed!. I have done the tour, but I have done a few tours of processing plants in my time!.
