How can you tell which apples are the softest?!
Well, some time ago I bought a couple of apples that were amazing!.
But lately, the apples I have been buying haven't been as good!.
I want to know how I can tell if an apple is soft and sweet by looking or touching it!.
The way the apple felt was like soft when you bit it!.
When you cut it, it had the soft inside when it touched your tongue!.

These are basics:
Press the apples lightly to make sure they're firm!.
Pay attention to the color, regardless of the type of apple!. It should be bright, relatively even and clear!.
Check for a fresh rather than a musty smell!.
Choose apples with smooth, unblemished skin!.
Investigate different apple varieties!. Even supermarkets are starting to keep more than just Red and Gold Delicious, which, although they keep well, are rather bland-tasting!.
Buy more apples in the fall, when they are harvested!.
Go to a local farmer's market!. Local apples will always be tastier than apples stored for months and brought in from far away, and you might find some interesting new types!.

Cister's answer was great, but I would look into the variety a little better!. If you bought apples that were amazing, you need to find out what you were eating!. They could have been honeycrisp or pink ladies!. They could be fujis or something else!. If you want that same flavor, you need to find out what you bought!. When you bought it is also important!. Each apple has its own season, and you need to find out when the season for your apple is!. Ask the produce person to help you discover this, or better yet (much better, to be truthful!) go to your local farmer's market and talk with an apple grower!. They will probably be able to tell you what you want to know, and they will give you more information!.
Some apples we are familiar with are not the apples of old!. The poor red and golden (to a lesser extent) have been modifed so far away from the original apples we ate years ago, that if you know someone that actually has a tree of these you may find what those apples REALLY taste like, and you could find a better apple too!. So, here is another source to find an apple that is close to your perfect apple!. :)
Baking apples and eating apples are not always the same!. You may have eaten a baking apple, and it was at a certain ripeness that really appealed to you!. Checking with an apple rancher would help here too!.
If you by any chance live near Sacramento, go to Apple Hill! Just like the Farmer's Markets, they have lots of places to go that will have an abundance of apples to sample and buy!. You will find more than one apples that is exactly what you find amazing!. If you aren't close to Apple Hill, look around for apple producers and see what you can discover!.
