well are we talking about fish or we talking about red meat like beef !?

Well if it is a fish you don't want your fish to smell like fish that means it has gone bad!. You also want to be able to see the pupil if it is whole that it is clear if it is murky then it may not be freshly caught and possibly frozen before!. If you have a chance to touch the fish you want to make sure the skin isn't slimy its also a sign that is more then 3 days catch, which means it has been sitting for awhile!. You want to make sure your filet is nice and smooth and that they have pulled out the main bones!. If the fish is red then you want to make sure the flesh is red and its not off pale it is still good to eat yet unfortunately it might be a little getting to that fishy smell!. Plus you may want to ask is it farm fish or open water fish!.!.!.the difference usually is what they are fed!.!.!.they say lot more farmed fish has more hormone treatments to buff up their bodies!. Red fish are more oily which mean different cooking methods to White fish which you commonly see white fish as Fish & Chips!. As well as when they were caught to when were they shipped!. And maybe if you don't know how to cook them what is the best for which kind of fish some times they might give you a small recipe to go along with it as well!.

Beef or meat you would go to a butcher so different parts of the animal are used for different things with many different methods!. Tenderloin is usually the most expensive part of the cattle and which is the most tenderest!. Usually see them listed in restaurants as fillet au mignon which is tenderloin wrapped in bacon served steak style!. Tell the butcher what you would like to make and they will mostly likely tell you which is the best cuts of meat for that selection!.

Yet if you could find bison or buffalo as they have been calling it in some parts its less fattier as a red meat!. And is a richer texture or flavour!. I personally would like it to beef any day but that is only my preference!.
