What is pancetta!?

Pancetta is an Italian bacon that is cured with salt, pepper, and other spices, but is not smoked!. Unlike English and American bacon, which are taken from the sides and belly of the pig, may be smoked, and are usually cut into slices, pancetta comes only from the belly, is salt-cured but not smoked, and is generally sold rolled up into sausage shapes!.

Italian pancetta (IPA: [pan?t?et?a]) or Spanish panceta (IPA: [pan?θeta]) is a type of dry cured meat!. It is pork belly that has been salt cured, salted and spiced (nutmeg, pepper, fennel, dried ground hot peppers and garlic are often featured), and dried for about three months (but usually not smoked)!. There are many varieties, and in Italy each region produces its own type!. In Corsica it is considered a regional flavour!.

it is a type of pork used a lot in italy and also spain!. it is what we would call belly pork - the word 'pancia' beening belly/tummy in italian!. it is cured and either bought diced (the little squares of bacon used in pasta carbonara), sliced thinly or sold in blocks!. the most common way to see it sold in the UK is already diced in little plastic packets!. xWww@FoodAQ@Com
