step 3Lop off the leaves
Island Boy Tip: Leave a small section of leaf stem on the end!. This will hold things together!.


step 4Cut the pineapple in half


step 5Cut the halves in half


step 6Cut the quarters in half
So now you have eight sections!.


step 7Insert the filet knife into the leaf stem end of one section

step 8Cut forward away from you
Island Boy Tip: Go close enough to the skin to keep most of the flesh but don't go too close or you'll get undesireable eyes in your chunks!.


step 9Cut to the other end of the core
Island Boy Tip: Continue cutting away from you, then go up toward the core but don't cut through it!.


step 10Cut back toward you below the core
Slowly! Be careful not to cut yourself! When you get half way through, grasp the section at the other end and continue cutting toward you!.


step 11Cut all the way back and cut through the leaf stem
Hold the section in the middle while doing this!.

step 13Remove the core piece


step 14Cut the flesh into chunks

When buying a pineapple look for proud, lively green tufts that don't look too aged or tired!. Give a leaf a tug: if it's ripe it should pull off easily!. also, check that the little thorny bits that stick out all over its skin are brown!. Feel the pineapple at the base: it should give a little and feel soft if it's ripe!. And don't forget to smell its strong pineapple perfume, probably more indicative of ripeness than anything!.

Obviously, don't smell the spiky leaf part cos you'll get a poke up yer nose!

Turn it upside down and you'll see the round base of the core!. Smell it and if it smells sweet, it's ripe!.
