Why shouldn't you cook meat from frozen?!

Most people say don't do it becuase the meat can get dry, but I find that if I drizzle a little bit of olive oil on it, wrap it in tin foil, place it in a glass pan and bake it at about 375 until its cooked through (45-60 minutes for chicken breasts, 30-50 minutes ofr salmon) then it doesn't get dry!Www@FoodAQ@Com
It has to do with internal temperature during the cooking process!. You want to make sure that whatever you are making is in the "Danger Zone" (40-140 degrees f) as little as possible!. That is the temperature range that promotes bacteria growth!. If you are making something thin, like a hamburger patty, there isn't much area to stay cold in the middle!. If you are making something thicker, like a bone in chicken breast, it might be 2-2!.5" thick!. Where the outside is heating up at a controlled rate, the inside will be considerably colder!. You are going to have the outside of meat that get hot enough quickly and safely, while the middle stays warm enough to thaw, but not hot enough to kill germs!. People will overcompensate for the inside taking longer by cooking the meat longer-results are the outside being dry and overcooked, while the middle may be perfect!. They will try to overcompensate that by cooking at a much lower temp, but that will make the inside of the meat stay in the "Danger Zone" much longer!. Long story short, it will be safer for the consumer for the product to be thawed before prep!. Results will be better too!.Www@FoodAQ@Com
You can!. Just make sure that you cook slow at a low temperature and make sure that the meat is thoroughly cooked before you eat it!.
I do this all the time, especially on a Sunday, meat goes in at 9 am and is ready for tea at tea time!. Slow cooked over a period of time is lovely!.
