When a water-based liquid is undisturbed in a sealed bottle and then supercooled to just below its freezing point, it will remain in a liquid state until agitated to the point where the water molecules align in the lattice structure that is ice!.
What happened when you opened the bottle is that air rushed into the small air gap above the liquid (since it was cold, a vacuum formed)!. This shock to the top surface of the liquid started the molecule alignment process!. Once the molecules begin aligning, this forms a chain reaction that quickly passes through the entire mass of liquid and it all freezes up at once!.
It's a really cool effect and you can see videos of it all over You Tube!.Www@FoodAQ@Com

It's a cool phenomenon!. I have observed it with bottled iced tea and vitamin water!. You don't have to open the bottle though!. It will turn solid if you rap on the bottle!. When you take the beverage from the freezer it's still liquid, but when you bang it down you can watch a slow progression to a solid!. As a side note vitamin water freezes with very small crystals!. So small that slushy vitamin water has a mouth feel like cold shortening; really gross!Www@FoodAQ@Com
That's funny!.!.!.they actually made a Gatorade the was suppose to be frozen!. The idea lasted only a couple of months because all the bottle would burst!
Just take a bit out of the bottle (maybe a 1/4 of it) and then freeze it!. It will work then! Great for soccer game day!!!
