How long does preserved meat last?!


Question: How long does preserved meat last!?
I'm a journalist and I interviewed a woman the other day who cans her own preserves in Mason jars!. She has homemade chicken broth and pickled beef that she claims lasts indefinitely, as long as the lid stays sealed and doesn't rust!. I'm skeptical -- I wouldn't eat year-old beef that's been sitting on the shelf!. Am I wrong!? What do you think!? I'd like to know before this article goes to print!.Www@FoodAQ@Com

I have had no probs w/any canned meat products incl!. chicken+ dumplings or stews of any meat type!. Pork-duck etc!. over a year I would have to look at it personally b-4 eating it, I can spag sce w/ all kinds of meats in it + save it for roughly a year!.
The military can package stuff to last several years, the most that happens is the flavor is not 100% as good as first prepared!.
I have eaten 40 year old k-rations + found no prob at all-Honestly, if you are proficient at canning + storing you have nothing to worry aboutWww@FoodAQ@Com
