Why do turkey legs have so many bones (or whatever those are)?!

Question: Why do turkey legs have so many bones (or whatever those are)!?
While I was eating a Turkey leg, I noticed something!. On it, there was of course the central bone, then the long, thin, needle-like bone that Chickens also have!. But I was surprised by so many little!.!.!.bones, I think!. I found dozens of them!.!.!.hard, white, long, thin pieces that were inedible!. I'm not sure if those were bones, since there were so many of them and they were so small, but they did seem like bones!.

So, what are those things in turkey legs!? Are they bones!? And if so, why are there so many!?

(I wasn't sure whether this should go in Zoology or Food and Drink!. :-/Www@FoodAQ@Com

Perhaps you are referring to their tendons and ligaments!. The bigger the animal, the bigger the tendons!.Www@FoodAQ@Com
