Do yellow potatoes have a sort of green color to them?!
I've never used yellow potatoes, but my husband bought a bag of yellow potatoes but they look green to me i don't think this is how they're suppose to look!. Are they good to eat!. i look at it like a banana it suppose to be yellow and sometimes they are not ripe so they are green which we can't really eat, well atleast i don't!. thanksWww@FoodAQ@Com

Potatoes that are green have been exposed to light and have developed a substance called solanine on them!. It has nothing to do with ripening- potatoes dont ripen!. A potato is a tuber, which means it grows under the ground and it stores excess nutrients and such for the plant to have a means of asexual reproduction!. The key there is that the potato grows underground!. It isn't supposed to ever see light!. When potatoes do see light, any types of light (artificial or real) they develop solanine!. Solanine is a toxic substance, but in small quantities wont kill you!. It has a tart flavor, and there is a company who makes potato chips out of slightly green potatoes to get that tart flavor!. So my advice would be to peel off as much green as you can!.!. the green will effect the flavor of the dish your trying to make!.
