Biscuits and gravy is a popular breakfast dish amongst southern people!. It consists of buttermilk American biscuits covered in thick "country" or "white" gravy made from the drippings of cooked pork sausage, white flour, milk, and often bits of real sausage, bacon, ground beef, or other meat!. The gravy is often flavored with black pepper!. In some parts of the South this is also called sawmill gravy!. The dish is best eaten soon after it is prepared, and is always served piping hot!.
While biscuits and gravy generally refers to sausage gravy (as described above) there are regional variations on this gravy!. Egg gravy is one variant popular in southern Indiana!. It is made by scrambling eggs in bacon grease, then adding flour and milk to make gravy, and adding crumbled bacon back to the mixture!. Tomato gravy is white gravy mixed with crushed or diced tomatoes!.

Of the Southern tradition, biscuits aren't what the British eat (with tea), or, what we Americans see as "cookies"!. They are made of dough, usually buttermilk, flour, water, eggs, and baked into a nice, hot, fluffy cake-like form with some flaking on top, but smaller!. Gravy is made of cornstarch, chicken or beef stock into a nice watery or thick consistency!. Well, the cornstarch is used to add thickness!. Some people like to "sop gravy" with biscuits!. I don't!. If you don't know what that expression means, it's dipping or soaking the biscuit in the gravy!.

What English people called "biscuits", we call "cookies"!.
What we call "biscuits" are essentially a type of roll!.
One takes the roll can pulls it into two halves, and then takes a laddle and pours gravy (usually a pork sausage gravy with lots of bits of pork sausage in the gravy) over it!. It is commonly served as a hot breakfast!.Www@FoodAQ@Com

Actually there are two different kinds!. Bisquits and Gravy can be with Sausage gravy or with Chipped Beef gravy!. Both are quite good but high in fat content and sodium!. For good recipes go to any southern cooking web site!. I have it on occasion just because its delicious but its not something you should have very often if you are watching your weight!. LOL
Sausage gravy recipe
1 pound ground pork sausage
3 tablespoons all-purpose flour
3 cups milk
DIRECTIONS
Place sausage in a large, deep skillet!. Cook over medium high heat until evenly brown!. Remove sausage, drain and set aside!.
Pour off most of the fat from the pan, leaving about 2 to 3 tablespoons!. Return pan to medium-low heat and add flour!. Using a whisk, stir vigorously until roux forms, scraping bottom of pan!. Reduce heat to low and let roux cook at least 5 minutes, stirring occasionally!. Grandma always "burned" hers a little on purpose!.
Add milk in a stream, whisking the whole time!. After adding about 2 1/2 cups, turn heat to medium and continue cooking, stirring constantly!. Bring gravy to a boil and cook to desired thickness!. Add more milk if a thinner gravy is desired!. You may also add some of the cooked and crumbled sausage to the gravy!.
Lg!. jar chip beef
3 c!. milk
3 tbsp!. cornstarch or flour
2 tbsp!. butter
Pepper if desired (NO SALT)
Creamy Chipped Beef Gravy
Make a smooth paste of the 3 tbsp!. cornstarch or flour with about 1/2 cup of the milk!. Then add to the 3 cups (or remaining 2 1/2 cups)!. Add butter and cook over medium heat stirring constantly!.
Towards end add the chip beef after you have broken it into small pieces and drained briefly under cold water!.
Good idea to do this first so it will be drained when you add it to the cream sauce!.)

I think you call our biscuits Scones!? basically they are dinner rolls with the gravy that you decribed over them usually it is a gravy made with ground sausage, sometimes called country style!.Www@FoodAQ@Com
