Question: Is it true that you shouldn't soak a turkey in brine that comes frozen in a plastic bag w/8% broth,salt etc!?
I want to use a brine soak, however I heard that you can only use a fresh turkey, that frozen turkeys are already in a salt solution!.Www@FoodAQ@Com

You can brine a frozen turkey!. I do it all the time!. But because it has been injected with a brine already it take a little longer for your brine to infuse any seasoning into the meat!. There are frozen turkeys that have not been injected!. Usually the cheaper brands!. I prefer them!.
Edit: There are hams that have not been fully cooked!. They are dry cured " Country " hams!. Burger's from Missouri is on!. Damn they are good! Need to be soaked in two or three changes of water to remove some of the salt but they sure are tasty!.Www@FoodAQ@Com

other than why are you doing this!? I can offer - most all meats that are processed a certian way are salt soaked!. Ham is salt soaked!. Turkey may or may not be!. Read the label, though it may say 'water added' doesn't necessarily mean it has been salt soaked!. To be more specific items that are salt soaked are actually 'cured'!. Meaning ready to eat and eat from the time you open them because the salt cure makes it very difficult for bacteria to compromise the product during packaging!.
Check the label very carefully!. Frozen turkeys are never pre cooked like every Ham you ever bought!. And I mean that honestly, Anyone that ever bought a ham unless it was straight from the butcher's block - it has been salt cured and pre-cooked !Www@FoodAQ@Com
