Why doesn't canned meat and 90 second dinner meat not go bad in those little containers?!

Question: Why doesn't canned meat and 90 second dinner meat not go bad in those little containers!?
I thought meat had to be refrigerated for it not to go bad!. But, obviously, we have canned beef stew, beef jerky, 90 second meals with chicken, beef, turkey!.!.!.Are all these things loaded with preservatives!? How do these things work!?Www@FoodAQ@Com

Answers:
The two main things that causes food to go bad!.!.!. bacteria (also, including stuff like mold, yeast, spores) and enzymes (within the meat)!.

canned foods are cooked in the can!.
The cooking kills the bacteria and destroys the enzymes!.
also, there's no air so bacteria can't grow!.

Beef jerky is salted and dried!. Salting and drying create a hostile enviroment for bacteria so bacterial grown is minimized!.
The heating also destroys the enzymes!.Www@FoodAQ@Com

well for the canned stews, hams an such those are well, some rather processed and have a lot of preservatives in them, but they go in the cans hot and cooked then sealed!.!.!.its like other canned foods!.!.!.!.that you store on a shelf!.!.BUT once opened you need to refrigerate it !.!.!.!.

as far as beef jerky that's basically dehydrated so its ok!.!.!.!.!.and so much salt involved it stays preserved for a period of time!.!.!.!.but must keep covered if in package or it too can get bad and moldy!.!.!.!.

the other question was more about other canned goods!.!.!.yours a bit different!.!.!.don't worry :)Www@FoodAQ@Com

The can is a closed environment while it's sitting on the shelf sealed!. They process the can at high temperatures so that it kills anything living!.inside it!. Nothing can harm the contents until you open it, then the shelf life is a few days!.Www@FoodAQ@Com
